RHUBARB
The first flavour that we created was the Rhubarb Hard Candy. Rhubarb was first introduced to Icelandic flora in the nineteenth century and has been popular in Icelandic cuisine ever since. It was a challenge to find the right balance between sweet and sour but ultimately we had great success.

APPLE &BIRCH
The Birch and Apple Hard Candy is the perfect mix of sweet and sour. Despite birch being the most common tree in Iceland and characteristic for Icelandic nature, it is overlooked in Icelandic cuisine. The freshness of the green apple and slight tartness of the birch create a mouth-watering combination.

ANGELICA & BLACKCURRANT
The Angelica and Blackcurrant Hard Candy was inspired by our love for unusual combinations of Icelandic herbs. Angelica was originally brought to Iceland as a medical remedy but nowadays it is commonly used in cooking as well. Although angelica and blackcurrant might seem like an unlikely pairing, their flavours elevate each other surprisingly well.

THYME & BLUEBERRY
What inspired us to create The Arctic Thyme and Blueberry Hard Candy was how closely those two plants grow to each other in Icelandic nature, without often being used as a combination. The creation process proved quite tricky due to how difficult it is to extract oil from arctic thyme, but we made it possible by hand-crafting our own tincture. We came to find that although it is an unusual combination, the arctic thyme and blueberry highlight each other perfectly.
